Thyme-Lemon Salmon

Ingredients

  • 3 (6-oz) salmon fillets
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 tsp chopped fresh thyme
  • 1 Tbsp lemon juice

Instructions

  1. Preheat broiler with oven rack 6 inches from heat. Arrange fish on a foil-lined baking sheet; brush with oil, and sprinkle with salt and pepper.
  2. Broil 5 to 7 minutes or until fish flakes with a fork.
  3. Sprinkle with thyme. Squeeze lemon juice over fish.

  • ½ cup sliced almonds
  • 3 cups torn romaine lettuce
  • 1 cup raspberries
  • ¼ cup crumbled blue cheese 
  • ¼ cup thinly sliced red onion
  • ¼ cup balsamic vinaigrette
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium-low heat until fragrant and golden.
  2. Toss together all ingredients in a bowl.
