Spanish-Style Fish
Green Beans with Oranges and OlivesIngredients
- ¼ cup fresh basil leaves
- 2 Tbsp sliced almonds
- 1 clove garlic, minced
- 1½ Tbsp olive oil, divided
- 1 Roma tomato, coarsely chopped
- 2 Tbsp chopped roasted red peppers
- 2 cod fillets (or other firm, white fish)
- ½ tsp kosher salt
- ⅛ tsp pepper
Instructions
- Pulse basil, nuts, garlic, and 1 Tbsp oil in a mini food processor until finely chopped. Add tomato and red peppers; pulse until smooth.
- Sprinkle fish with salt and pepper. Cook in ½ Tbsp hot oil in a medium skillet over medium-high heat 3 minutes; reduce heat to medium, and turn fish.
- Pour sauce around fish; cook 5 minutes or until fish flakes with a fork. Serve fish with sauce.

- ½ lb green beans, trimmed
- 1½ Tbsp olive oil, divided
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- ¼ cup pitted olives
- 1 orange, peeled and coarsely chopped
Side Dish Instructions
- Preheat oven to 450°F. Toss beans with 1 Tbsp oil, salt, and pepper on a rimmed baking sheet. Bake 10 minutes or until crisp-tender.
- Toss together olives, orange, and ½ Tbsp oil; spoon over beans.
