Spanish-Style Fish

Green Beans with Oranges and Olives

Ingredients

  • ¼ cup fresh basil leaves
  • 2 Tbsp sliced almonds
  • 1 clove garlic, minced
  • 1½ Tbsp olive oil, divided
  • 1 Roma tomato, coarsely chopped
  • 2 Tbsp chopped roasted red peppers
  • 2 cod fillets (or other firm, white fish)
  • ½ tsp kosher salt
  • ⅛ tsp pepper

Instructions

  1. Pulse basil, nuts, garlic, and 1 Tbsp oil in a mini food processor until finely chopped. Add tomato and red peppers; pulse until smooth.
  2. Sprinkle fish with salt and pepper. Cook in ½ Tbsp hot oil in a medium skillet over medium-high heat 3 minutes; reduce heat to medium, and turn fish.
  3. Pour sauce around fish; cook 5 minutes or until fish flakes with a fork. Serve fish with sauce.

  • ½ lb green beans, trimmed
  • 1½ Tbsp olive oil, divided
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper
  • ¼ cup pitted olives
  • 1 orange, peeled and coarsely chopped

Side Dish Instructions

  1. Preheat oven to 450°F. Toss beans with 1 Tbsp oil, salt, and pepper on a rimmed baking sheet. Bake 10 minutes or until crisp-tender.
  2. Toss together olives, orange, and ½ Tbsp oil; spoon over beans.
