Skillet Sausage and Shrimp
Creamy CauliflowerIngredients
- 1 (14-oz) pkg smoked sausage, cut into ½-inch pieces
- 2 Tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried crushed rosemary
- 1 tsp dried thyme
- 1 (1-lb) pkg frozen peeled, large raw shrimp, thawed and patted dry
- 1 Tbsp lemon juice
- 1 tsp lemon zest
Instructions
- Cook sausage in hot oil in a large skillet over medium heat 5 minutes or until browned.
- Add onion, garlic, rosemary, and thyme; cook 8 minutes, stirring often. Add shrimp, lemon zest and juice.
- Cook 3 to 5 minutes or until shrimp turn pink.
Side Dish Ingredients
- 2 (10-oz) pkg cauliflower florets
- 2 Tbsp water
- 1 (8-oz) carton cream cheese with chives
- ¼ cup butter
- 2 cloves garlic, crushed
- ½ tsp kosher salt
Side Dish Instructions
- Microwave cauliflower and water, covered, in a large microwave-safe dish at HIGH 8 minutes or until tender; drain.
- Pulse cauliflower, cream cheese, butter, garlic, and salt in a food processor until desired consistency.
