Sage Butter Chicken

Ingredients

  • 1 cup almond flour
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ lb chicken tenderloins
  • 2 Tbsp olive oil
  • ½ cup low-sodium chicken broth
  • 2 Tbsp butter
  • 1 Tbsp chopped fresh sage

Instructions

  1. Stir together flour, salt, and pepper in a shallow dish. Dredge chicken in flour mixture, shaking off excess.
  2. Cook chicken, in batches, in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until browned; remove from skillet.
  3. Add broth to skillet; bring to a boil over medium heat, scraping pan to loosen browned bits. Cook 3 to 5 minutes or until liquid is reduced by half.
  4. Remove from heat; stir in butter and sage. Spoon sauce over chicken.

Side Dish Ingredients

  • ¼ cup chopped onion
  • 2 tsp olive oil
  • 2 (10-oz) pkg frozen riced broccoli (such as Green Giant)
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp butter
  • ¾ cup shredded Gouda cheese (or use Cheddar)

Side Dish Instructions

  1. Cook onion in hot oil in a large skillet over medium heat 2 to 3 minutes or until tender.
  2. Stir in broccoli, salt, and pepper. Cook 8 to 10 minutes or until tender.
  3. Stir in butter and cheese; reduce heat and cook 2 minutes until cheese melts.
