Chicken and Sausage Jambalaya

Ingredients

  • 1 (12-oz) pkg cauliflower crumbles
  • 1 (13-oz) pkg Andouille smoked sausage, sliced
  • 2 red bell peppers, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 cups diced rotisserie chicken
  • 1 (14.5-oz) can diced tomatoes
  • 1 (14.5-oz) can low-sodium kidney beans, drained and rinsed
  • ½ Tbsp Creole seasoning

Instructions

  1. Steam cauliflower according to package directions.
  2. Cook sausage, bell peppers, onion, and garlic in hot oil in a Dutch oven 5 minutes or until tender.
  3. Stir in chicken, tomatoes, beans, and seasoning; reduce heat, and simmer 5 minutes.
  4. Stir in cauliflower.
