Open-Faced Sweet Potato Turkey Burgers
Lemon-Pepper Glazed AsparagusIngredients
- 2 sweet potatoes
- 1 Tbsp olive oil
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1½ lb ground turkey
- ¼ cup chopped onion
- ½ tsp dried crushed rosemary
- 6 slices Swiss cheese
- 6 Tbsp olive-oil mayonnaise
- 1 Tbsp Dijon mustard
- 6 Bibb lettuce leaves
- 1 tomato, sliced
- 1 avocado, sliced
Instructions
- Preheat oven to 400°F. Cut potatoes lengthwise into 6 (½-inch-thick) slices; toss with oil and ¼ tsp each salt and pepper on rimmed baking sheet. Bake 25 minutes or until tender, turning once.
- Meanwhile, preheat grill or grill pan to medium-high heat. Mix together turkey, onion, rosemary, and ¼ tsp each salt and pepper; shape into 6 patties. Grill, covered, 4 minutes per side or until done.
- Top burgers with cheese; grill, covered, 1 minute or until cheese melts.
- Whisk together mayonnaise and mustard. Spread over potatoes; top with lettuce, burgers, tomato, and avocado.

Side Dish Instructions
- Preheat grill or grill pan to medium-high heat. Grate zest and squeeze juice from lemon. Whisk together lemon juice, mayonnaise, oil, salt, and pepper in a large bowl. Add asparagus; toss to coat. Let stand for 15 minutes.
- Grill asparagus 4 to 6 minutes or until tender and blistered. Sprinkle with lemon zest.
