Open-Faced Sweet Potato Turkey Burgers

Ingredients

  • 2 sweet potatoes
  • 1 Tbsp olive oil
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1½ lb ground turkey 
  • ¼ cup chopped onion
  • ½ tsp dried crushed rosemary
  • 6 slices Swiss cheese
  • 6 Tbsp olive-oil mayonnaise
  • 1 Tbsp Dijon mustard
  • 6 Bibb lettuce leaves
  • 1 tomato, sliced
  • 1 avocado, sliced

Instructions

  1. Preheat oven to 400°F. Cut potatoes lengthwise into 6 (½-inch-thick) slices; toss with oil and ¼ tsp each salt and pepper on rimmed baking sheet. Bake 25 minutes or until tender, turning once.
  2. Meanwhile, preheat grill or grill pan to medium-high heat. Mix together turkey, onion, rosemary, and ¼ tsp each salt and pepper; shape into 6 patties. Grill, covered, 4 minutes per side or until done.
  3. Top burgers with cheese; grill, covered, 1 minute or until cheese melts.
  4. Whisk together mayonnaise and mustard. Spread over potatoes; top with lettuce, burgers, tomato, and avocado.

  • ½ tsp salt
  • ½ tsp pepper
  • 1 lb asparagus, trimmed 

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Grate zest and squeeze juice from lemon. Whisk together lemon juice, mayonnaise, oil, salt, and pepper in a large bowl. Add asparagus; toss to coat. Let stand for 15 minutes.
  2. Grill asparagus 4 to 6 minutes or until tender and blistered. Sprinkle with lemon zest.
