Pork Ramen Zoodle Soup

Ingredients
- 2 lb pork tenderloin
- 1 cup teriyaki marinade (such as Soy Vay)
- 1 (32-oz) carton low-sodium chicken broth
- 1 (8-oz) pkg sliced mushrooms
- 2 Tbsp sesame oil
- 1 Tbsp low-sodium soy sauce
- 1 tsp refrigerated ginger paste
- 2 cloves garlic, crushed
- 1 (16-oz) pkg zucchini noodles
- 1½ cups shredded red cabbage
- ¾ cup shredded carrots
- 3 green onions, sliced
- 2 Tbsp sesame seeds
Instructions
- Combine pork and marinade in a large zip-top plastic bag; seal and chill 4 to 24 hours.
- Preheat grill or grill pan to medium-high heat. Remove pork from bag; discard marinade.
- Grill pork, covered, 20 to 25 minutes or until a meat thermometer reads 145°F, turning occasionally. Let stand 10 minutes before thinly slicing.
- Meanwhile, bring broth, mushrooms, oil, soy sauce, ginger paste, and garlic to a boil in a Dutch oven over medium-high heat. Reduce heat, and simmer 8 minutes.
- Divide zucchini, cabbage, carrots, and pork among 6 bowls. Spoon broth over each bowl. Sprinkle with onions and sesame seeds.
