Pork Ramen Zoodle Soup

Ingredients

  • 2 lb pork tenderloin 
  • 1 cup teriyaki marinade (such as Soy Vay)
  • 1 (32-oz) carton low-sodium chicken broth
  • 1 (8-oz) pkg sliced mushrooms
  • 2 Tbsp sesame oil
  • 1 Tbsp low-sodium soy sauce 
  • 1 tsp refrigerated ginger paste
  • 2 cloves garlic, crushed
  • 1 (16-oz) pkg zucchini noodles
  • 1½ cups shredded red cabbage 
  • ¾ cup shredded carrots
  • 3 green onions, sliced
  • 2 Tbsp sesame seeds

Instructions

  1. Combine pork and marinade in a large zip-top plastic bag; seal and chill 4 to 24 hours.
  2. Preheat grill or grill pan to medium-high heat. Remove pork from bag; discard marinade.
  3. Grill pork, covered, 20 to 25 minutes or until a meat thermometer reads 145°F, turning occasionally. Let stand 10 minutes before thinly slicing.
  4. Meanwhile, bring broth, mushrooms, oil, soy sauce, ginger paste, and garlic to a boil in a Dutch oven over medium-high heat. Reduce heat, and simmer 8 minutes.
  5. Divide zucchini, cabbage, carrots, and pork among 6 bowls. Spoon broth over each bowl. Sprinkle with onions and sesame seeds.
