Grilled Halloumi Caprese Salad

Ingredients
- 1½ (8.8-oz) blocks halloumi cheese, cut into ½-inch-thick slices (see Note)
- 1 avocado, halved
- 3 Tbsp olive oil, divided
- 2 tsp dried oregano
- 1 (6-oz) pkg baby spinach
- 2 large tomatoes, sliced
- 1 (1-oz) pkg fresh basil leaves
- ½ tsp pepper
- ¼ tsp salt
- 3 Tbsp balsamic glaze (such as Bertolli)
Instructions
- Preheat grill to medium-high heat. Brush cheese and avocado with 1 Tbsp oil, and sprinkle with oregano.
- Grill cheese, covered, 2 minutes per side or until grill marks appear. Grill avocados cut sides down, 3 to 5 minutes or until browned; discard skins and slice avocado.
- Divide spinach among 6 plates. Top with cheese, avocado, tomatoes, and basil; sprinkle with pepper and salt.
- Drizzle with 2 Tbsp oil and balsamic glaze.
