Pineapple-Banana Smoothie

Honey-Ginger Macadamia Nuts

Ingredients

  • 3 cups pineapple chunks
  • 3 bananas, cut into big pieces
  • 1 (13.5-oz) can coconut milk
  • ¼ cup raw honey
  • 2 Tbsp fresh lime juice
  • 1½ cups crushed or cubed ice

Instructions

  1. Process half of ingredients in a blender, scraping sides as needed. Add enough water to reach desired consistency. Pour into glasses.
  2. Repeat with remaining half of ingredients.

Side Dish Ingredients

  • 1 cup macadamia nuts (or use walnuts or pecans)
  • 1 Tbsp raw honey
  • ⅛ tsp ground ginger
  • Pinch of salt

Side Dish Instructions

  1. Heat a dry large skillet over medium-high heat. Add nuts, honey, ginger, and salt; cook 3 minutes or until honey and nuts are browned, stirring often. Cool. Serve warm or at room temperature.
