Old-Fashioned Banana Pudding

Ingredients
- 8 bananas, divided
- 1¼ cups sugar
- ½ cup all-purpose flour
- ½ tsp salt
- 4½ cups milk
- 8 egg yolks
- 3 Tbsp butter
- 1 tsp vanilla extract
- 1 (12-oz) pkg vanilla wafers
- 1 (16-oz) carton frozen whipped topping, thawed
- Garnish: crumbled vanilla wafers
Instructions
- Slice 4 bananas.
- Whisk together sugar, flour, and salt in a saucepan. Whisk together milk and egg yolks in a bowl; add to sugar mixture, whisking until smooth.
- Cook over medium heat, stirring constantly, 8 to 10 minutes or until very thick. Remove from heat; whisk in butter and vanilla until butter is melted.
- Layer half of wafers, half of custard, and sliced bananas in a 3-quart baking dish; top with remaining wafers and custard. Cover tightly with plastic wrap, and chill 4 hours to 2 days.
- Slice 4 bananas. Top pudding with banana slices and whipped topping before serving. Garnish, if desired.
