Peanut Butter-Ganache Sandwich Cookies
Ingredients
- ½ cup milk chocolate chips
- ¼ cup heavy cream
- ¼ cup butter, softened
- ½ cup creamy peanut butter
- 1 cup powdered sugar
- 1 Tbsp milk
- 1 tsp vanilla extract
- Pinch of salt
- 12 large bakery peanut butter cookies (see Note)
Instructions
- Place chocolate in a heatproof bowl. Bring cream to a simmer in a small saucepan over medium heat; remove from heat, and immediately pour over chocolate.
- Let stand 5 minutes. Stir with a rubber spatula until chocolate is completely melted and ganache is smooth.
- Beat butter and peanut butter at medium speed with an electric mixer until smooth. Add sugar, milk, vanilla, and salt. Beat until blended.
- Spread ganache on 6 cookies; spread frosting on 6 cookies. Sandwich cookies together to serve.
