Turmeric-Masala Scrambled Eggs

Ingredients
- 1 (8-oz) pkg sliced mushrooms
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 3 Tbsp olive oil
- 12 large eggs
- 1 tsp ground turmeric
- 1 tsp garam masala
- ½ tsp salt
- ½ cup sparkling water (see Note)
- Chopped fresh cilantro (optional)
Instructions
- Cook mushrooms, onion, and garlic in hot oil in a large skillet over medium-high heat 6 to 8 minutes, stirring constantly, until lightly browned.
- Whisk together eggs, turmeric, garam masala, and salt in a bowl. Add sparkling water, and whisk lightly.
- Add egg mixture to skillet; cook over medium heat, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Sprinkle with cilantro, if desired.
Side Dish Ingredients
- 6 Tbsp butter, softened
- ¼ cup chopped fresh cilantro (see Note)
- 2 cloves garlic, minced
- 6 slices whole-grain bread, toasted
Side Dish Instructions
- Combine butter, cilantro, and garlic. Serve with toast.
