Turmeric-Masala Scrambled Eggs

Ingredients

  • 1 (8-oz) pkg sliced mushrooms
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 3 Tbsp olive oil
  • 12 large eggs
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • ½ tsp salt
  • ½ cup sparkling water (see Note)
  • Chopped fresh cilantro (optional)

Instructions

  1. Cook mushrooms, onion, and garlic in hot oil in a large skillet over medium-high heat 6 to 8 minutes, stirring constantly, until lightly browned.
  2. Whisk together eggs, turmeric, garam masala, and salt in a bowl. Add sparkling water, and whisk lightly.
  3. Add egg mixture to skillet; cook over medium heat, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Sprinkle with cilantro, if desired.

Side Dish Ingredients

  • 6 Tbsp butter, softened
  • ¼ cup chopped fresh cilantro (see Note)
  • 2 cloves garlic, minced
  • 6 slices whole-grain bread, toasted

Side Dish Instructions

  1. Combine butter, cilantro, and garlic. Serve with toast.
