Homestyle Chicken and Rice
Steamed BroccoliIngredients
- 2 lb boneless, skinless chicken breasts
- 3 cups low-sodium chicken broth
- 1½ cups long-grain brown rice, rinsed
- 2 cups chopped onion
- 1 cup chopped organic celery
- 1 cup chopped carrots
- 1 (8-oz) block cream cheese, cut into pieces
- 2 cloves garlic, minced
- 1 bay leaf
- 2 tsp dried thyme
- 1 tsp salt
- 1 tsp pepper
- ¼ cup chopped fresh parsley (optional)
Instructions
- Cut chicken into 2-inch pieces, and place in a 5- or 6-quart slow cooker. Add remaining ingredients except parsley.
- Cover and cook on LOW 5 hours or until chicken is tender; sprinkle with parsley, if desired.
Side Dish Ingredients
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Microwave broccoli according to package directions; toss with oil, salt, and pepper.
