Homestyle Chicken and Rice

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 3 cups low-sodium chicken broth
  • 1½ cups long-grain brown rice, rinsed
  • 2 cups chopped onion
  • 1 cup chopped organic celery
  • 1 cup chopped carrots
  • 1 (8-oz) block cream cheese, cut into pieces
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1 tsp pepper
  • ¼ cup chopped fresh parsley (optional)

Instructions

  1. Cut chicken into 2-inch pieces, and place in a 5- or 6-quart slow cooker. Add remaining ingredients except parsley.
  2. Cover and cook on LOW 5 hours or until chicken is tender; sprinkle with parsley, if desired.

  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Microwave broccoli according to package directions; toss with oil, salt, and pepper.
