Grilled Honey-Glazed Pork Tenderloin

Ingredients

  • ¼ cup olive oil 
  • 3 Tbsp honey
  • 2 Tbsp chopped fresh rosemary
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cloves garlic, crushed
  • 1½ lb pork tenderloin
  • ¼ cup butter, softened
  • 2 tsp Dijon mustard
  • ¼ tsp garlic powder

Instructions

  1. Preheat grill or grill pan to medium-high heat. Whisk together oil, honey, rosemary, salt, pepper, and garlic; brush over pork.
  2. Grill pork, covered, 20 to 30 minutes or until a meat thermometer reads 145°F, turning occasionally. Let stand 5 minutes before slicing.
  3. Stir together butter, mustard, and garlic powder. Serve with pork.

Side Dish Ingredients

  • 1 lb Broccolini (or use broccoli florets) 
  • 3 Tbsp olive oil
  • 3 Tbsp lemon juice 
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (5-oz) pkg arugula
  • ¾ cup refrigerated balsamic vinaigrette
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup toasted pine nuts

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Drizzle Broccolini with oil and lemon juice; sprinkle with salt and pepper. Grill 3 minutes per side or until charred.
  2. Toss together arugula, Broccolini, vinaigrette, and cheese in a bowl. Sprinkle with pine nuts.
