Baked Feta Greek Salad

Ingredients
- 1½ (8-oz) blocks feta cheese
- 4 Tbsp olive oil
- 3 Tbsp honey
- ½ tsp crushed red pepper
- 1 (5-oz) pkg baby spinach
- 1 English cucumber, chopped
- 1 cup grape tomatoes, quartered
- ½ cup chopped pitted kalamata olives
- ¾ cup refrigerated lemon vinaigrette
- ½ cup chopped walnuts
- 1 Tbsp fresh chopped oregano
Instructions
- Preheat oven to 400°F. Pat cheese dry with paper towels, and drizzle with oil in an ovenproof skillet. Bake 3 to 5 minutes or until cheese is soft and springy to touch but not melted. Remove skillet from oven.
- Preheat broiler. Brush cheese with honey; sprinkle with pepper. Broil 2 to 4 minutes or until browned. Let cool slightly, then cut into cubes.
- Toss together spinach, cucumber, tomatoes, olives, vinaigrette, walnuts, and oregano; divide salad among 6 plates. Top with cheese.
