Indian Butter Chicken
Tandoori Spiced Broccolini
Ingredients
- 1½ tsp coconut oil (or use olive oil)
- ¾ lb boneless, skinless chicken thighs, quartered
- ¼ cup sliced onion
- ¾ cup butter chicken sauce (such as Patak's; see Note)
- ¼ cup tomato sauce
- 1½ tsp tandoori spice (such as Manitou)
- ¼ cup half-and-half
Instructions
- Melt oil in a large skillet over high heat. Add chicken to skillet, and cook 3 minutes per side.
- Add onion; cook 5 minutes or until tender.
- Add butter chicken sauce, tomato sauce, and tandoori spice.
- Reduce heat; add half and half, and simmer 10 to 15 minutes or until chicken is done.

- ¾ lb Broccolini
- 2 Tbsp olive oil
- 1 clove garlic, minced
- 2 tsp tandoori spice (such as Manitou)
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together Broccolini, oil, garlic, and tandoori spice on a rimmed baking sheet; sprinkle with salt and pepper.
- Bake 10 to 15 minutes or until tender.
