Indian Butter Chicken

Tandoori Spiced Broccolini

Ingredients

  • 1½ tsp coconut oil (or use olive oil)
  • ¾ lb boneless, skinless chicken thighs, quartered
  • ¼ cup sliced onion
  • ¾ cup butter chicken sauce (such as Patak's; see Note)
  • ¼ cup tomato sauce
  • 1½ tsp tandoori spice (such as Manitou)
  • ¼ cup half-and-half

Instructions

  1. Melt oil in a large skillet over high heat. Add chicken to skillet, and cook 3 minutes per side.
  2. Add onion; cook 5 minutes or until tender.
  3. Add butter chicken sauce, tomato sauce, and tandoori spice.
  4. Reduce heat; add half and half, and simmer 10 to 15 minutes or until chicken is done.

Side Dish Ingredients

  • ¾ lb Broccolini 
  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • 2 tsp tandoori spice (such as Manitou)
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together Broccolini, oil, garlic, and tandoori spice on a rimmed baking sheet; sprinkle with salt and pepper.
  2. Bake 10 to 15 minutes or until tender.
