Grilled Cajun Chicken
Okra-Tomato Kabobs
Ingredients
- ¾ lb boneless, skinless chicken breasts, cut in half crosswise
- 1 Tbsp olive oil
- 1 Tbsp salt-free Cajun seasoning
- ¼ tsp garlic powder
- ¼ tsp salt
Instructions
- Preheat grill to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Rub with oil, and sprinkle with Cajun seasoning, garlic powder, and salt.
- Grill, covered, 5 to 8 minutes per side or until done.

- ¾ lb okra
- 1 cup cherry tomatoes
- 1 Tbsp olive oil
- ¼ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat grill to medium-high heat. Toss together okra, tomatoes, oil, salt, and pepper; thread onto metal or bamboo skewers (see Note).
- Grill, covered, 3 minutes per side or until tender.
