Grilled Cajun Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut in half crosswise
  • 1 Tbsp olive oil
  • 1 Tbsp salt-free Cajun seasoning
  • ¼ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Preheat grill to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Rub with oil, and sprinkle with Cajun seasoning, garlic powder, and salt.
  2. Grill, covered, 5 to 8 minutes per side or until done.

  • ¾ lb okra
  • 1 cup cherry tomatoes
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat grill to medium-high heat. Toss together okra, tomatoes, oil, salt, and pepper; thread onto metal or bamboo skewers (see Note).
  2. Grill, covered, 3 minutes per side or until tender.
