Smoked Sausage-Tortellini Skillet
Honey-Thyme Roasted CarrotsIngredients
- 1 (14-oz) pkg smoked sausage link, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (14.5-oz) can petite diced tomatoes
- 2 cups chicken broth
- 1 cup heavy cream
- 1 (19-oz) pkg frozen cheese tortellini
- 1 (10-oz) pkg spinach
Instructions
- Cook sausage, onion, and garlic in hot oil in a large deep skillet over medium heat until sausage is browned.
- Add tomatoes, broth, and cream to skillet; bring to a boil.
- Stir in tortellini; reduce heat, cover and simmer 10 to 12 minutes or until tortellini is tender. Uncover and gradually stir in spinach until wilted. Season with salt and pepper to taste.
Side Dish Ingredients
- 8 carrots, cut into 3-inch pieces
- 3 Tbsp olive oil
- 2 Tbsp honey
- 1 tsp dried thyme
Side Dish Instructions
- Preheat oven to 425°F. Toss together carrots, oil, honey, and thyme on a lightly greased rimmed baking sheet; season lightly with salt and pepper.
- Bake 20 minutes or until browned and tender.
