Steak with Basil-Blue Cheese Butter

Sweet Potatoes and Steamed Green Beans

Ingredients

  • ¾ lb top sirloin steak, trimmed (about 1½ inches thick)
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1½ Tbsp butter, softened
  • 1 oz crumbled blue cheese
  • 2 tsp chopped fresh basil

Instructions

  1. Preheat grill to medium-high heat. Sprinkle steak with salt and pepper.
  2. Grill steak 8 to 9 minutes per side or to desired doneness, watching for flareups.
  3. Cover with foil, and let steak stand 5 to 10 minutes; cut into 2 serving-size portions.
  4. Meanwhile, combine butter, cheese, and basil, stirring until blended. Smear blue cheese butter on steak.

  • 1 organic sweet potato
  • ¼ tsp salt, divided
  • ½ tsp pepper, divided
  • ½ lb green beans, trimmed

Side Dish Instructions

  1. Preheat oven to 425°F. Prick and bake potato 30 minutes or until tender; cool slightly, and cut each potato in half lengthwise. Sprinkle with ⅛ tsp each salt and pepper.
  2. Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender. Sprinkle beans with ⅛ tsp each salt and pepper.
