Steak with Basil-Blue Cheese Butter
Sweet Potatoes and Steamed Green BeansIngredients
- ¾ lb top sirloin steak, trimmed (about 1½ inches thick)
- ¼ tsp salt
- ¼ tsp pepper
- 1½ Tbsp butter, softened
- 1 oz crumbled blue cheese
- 2 tsp chopped fresh basil
Instructions
- Preheat grill to medium-high heat. Sprinkle steak with salt and pepper.
- Grill steak 8 to 9 minutes per side or to desired doneness, watching for flareups.
- Cover with foil, and let steak stand 5 to 10 minutes; cut into 2 serving-size portions.
- Meanwhile, combine butter, cheese, and basil, stirring until blended. Smear blue cheese butter on steak.
Side Dish Ingredients
- 1 organic sweet potato
- ¼ tsp salt, divided
- ½ tsp pepper, divided
- ½ lb green beans, trimmed
Side Dish Instructions
- Preheat oven to 425°F. Prick and bake potato 30 minutes or until tender; cool slightly, and cut each potato in half lengthwise. Sprinkle with ⅛ tsp each salt and pepper.
- Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender. Sprinkle beans with ⅛ tsp each salt and pepper.
