One Dish Dinner
Ground Beef Taco Salad

Ingredients
- 1 Tbsp coconut oil (or use avocado oil)
- 1½ lb grass-fed ground beef
- 3 cloves garlic, minced
- 1 Tbsp Southwest seasoning
- ½ tsp pepper
- 2 Tbsp fresh lime juice
- ½ tsp garlic salt
- 2 Tbsp extra virgin olive oil
- ¼ cup chopped fresh cilantro (or use parsley)
- 2 romaine lettuce hearts, shredded
- 2 avocados, diced
- 2 beefsteak tomatoes, chopped
- 1 jicama, peeled and shredded
Instructions
- Heat coconut oil in a large nonstick skillet over medium-high heat; add beef, garlic, seasoning, and pepper. Cook 8 minutes or until beef is browned and crumbly.
- Whisk together lime juice and garlic salt in a small bowl until blended.
- Gradually whisk in olive oil, blending well; stir in cilantro.
- Divide lettuce, avocado, tomatoes, and jicama among 6 plates; top each with beef mixture, and drizzle with dressing.
