Ground Beef Taco Salad

Ingredients

  • 1 Tbsp coconut oil (or use avocado oil)
  • 1½ lb grass-fed ground beef
  • 3 cloves garlic, minced
  • 1 Tbsp Southwest seasoning
  • ½ tsp pepper
  • 2 Tbsp fresh lime juice
  • ½ tsp garlic salt
  • 2 Tbsp extra virgin olive oil
  • ¼ cup chopped fresh cilantro (or use parsley)
  • 2 romaine lettuce hearts, shredded
  • 2 avocados, diced
  • 2 beefsteak tomatoes, chopped
  • 1 jicama, peeled and shredded

Instructions

  1. Heat coconut oil in a large nonstick skillet over medium-high heat; add beef, garlic, seasoning, and pepper. Cook 8 minutes or until beef is browned and crumbly.
  2. Whisk together lime juice and garlic salt in a small bowl until blended.
  3. Gradually whisk in olive oil, blending well; stir in cilantro.
  4. Divide lettuce, avocado, tomatoes, and jicama among 6 plates; top each with beef mixture, and drizzle with dressing.
