Balsamic-Lemon-Glazed Chicken Thighs

Ingredients

  • ¼ cup balsamic vinegar
  • 1 Tbsp coconut oil, melted (or use avocado oil)
  • 1 Tbsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • ⅛ tsp dry mustard
  • 1 lb bone-in chicken thighs, skinned

Instructions

  1. Combine vinegar, oil, lemon juice, salt, pepper, and mustard in a small bowl.
  2. Brush half of mixture on chicken thighs. Let stand 30 minutes.
  3. Preheat oven to 375°F. Place chicken on a rimmed baking sheet lined with foil.
  4. Bake 35 minutes or until chicken is done, basting with remaining balsamic marinade.

  • 1 lb Brussels sprouts, halved
  • ¾ red onion, sliced
  • 1 Tbsp coconut oil, melted (or use avocado oil)
  • 2 tsp Italian seasoning
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 375°F. Combine Brussels sprouts, onion, oil, seasoning, garlic, salt, and pepper on a rimmed baking sheet.
  2. Bake 15 to 18 minutes or until browned, stirring once.
