Walnut-Crusted Tilapia
Maple-Bacon Green Beans
Ingredients
- 1 cup walnut halves
- ½ cup panko breadcrumbs
- 1 Tbsp salt-free Cajun seasoning
- 6 (5-oz) tilapia fillets
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 425°F. Pulse walnuts, breadcrumbs, and seasoning in a food processor until mixture resembles fine crumbs; set aside.
- Place fish on a parchment paper-lined baking sheet. Sprinkle with salt and pepper.
- Sprinkle nut mixture over fish, pressing to adhere.
- Bake 10 to 15 minutes or until fish flakes with a fork.

- 3 slices thick cut bacon
- 1 lb green beans, trimmed
- ½ onion, thinly sliced
- 1 Tbsp maple syrup
- 2 tsp chopped fresh rosemary
- ¼ tsp salt
Side Dish Instructions
- Cook bacon in large skillet over medium-high heat 6 to 8 minutes or until crisp; drain, reserving drippings in skillet. Crumble bacon.
- Sauté green beans and onion in hot drippings 8 to 10 minutes or until tender. Stir in maple syrup, rosemary, and salt. Sprinkle with bacon.
