Walnut-Crusted Tilapia

Ingredients

  • 1 cup walnut halves
  • ½ cup panko breadcrumbs
  • 1 Tbsp salt-free Cajun seasoning 
  • 6 (5-oz) tilapia fillets 
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 425°F. Pulse walnuts, breadcrumbs, and seasoning in a food processor until mixture resembles fine crumbs; set aside.
  2. Place fish on a parchment paper-lined baking sheet. Sprinkle with salt and pepper.
  3. Sprinkle nut mixture over fish, pressing to adhere.
  4. Bake 10 to 15 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 3 slices thick cut bacon
  • 1 lb green beans, trimmed
  • ½ onion, thinly sliced
  • 1 Tbsp maple syrup
  • 2 tsp chopped fresh rosemary 
  • ¼ tsp salt

Side Dish Instructions

  1. Cook bacon in large skillet over medium-high heat 6 to 8 minutes or until crisp; drain, reserving drippings in skillet. Crumble bacon.
  2. Sauté green beans and onion in hot drippings 8 to 10 minutes or until tender. Stir in maple syrup, rosemary, and salt. Sprinkle with bacon.
