Croque Monsieur Chicken Bake
Ingredients
- 2 (12-oz) pkg cauliflower florets
- 1½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 Tbsp canola oil, divided
- 3 Tbsp butter
- 2 Tbsp all-purpose flour
- ½ tsp pepper, divided
- 1 cup milk
- 1 cup low-sodium chicken broth
- ¾ cup shredded Swiss cheese, divided
- ½ lb sliced low-sodium ham
- ¼ cup freshly grated Parmesan cheese
- 1 cup arugula
- ⅛ tsp salt
Instructions
- Preheat broiler. Steam cauliflower according to package directions.
- Meanwhile, cook chicken in 2 tsp oil in a large cast iron skillet over medium-high heat 8 to 10 minutes or until done. Remove from skillet.
- Melt butter in same skillet over medium heat; add flour and ¼ tsp pepper Cook 2 minutes, stirring constantly.
- Gradually stir in milk and broth; cook 6 to 8 minute until bubbly, stirring constantly. Gradually add ½ cup Swiss cheese, stirring until melted.
- Stir in cauliflower, chicken, and ham. Top with ¼ cup Swiss cheese and Parmesan. Broil 2 to 5 minutes or until cheese is browned.
- Meanwhile, toss together arugula, 1 tsp oil, ¼ tsp pepper, and salt in a bowl. Sprinkle over casserole.
