Croque Monsieur Chicken Bake

Ingredients

  • 2 (12-oz) pkg cauliflower florets
  • 1½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 Tbsp canola oil, divided 
  • 3 Tbsp butter
  • 2 Tbsp all-purpose flour
  • ½ tsp pepper, divided 
  • 1 cup milk
  • 1 cup low-sodium chicken broth
  • ¾ cup shredded Swiss cheese, divided
  • ½ lb sliced low-sodium ham
  • ¼ cup freshly grated Parmesan cheese
  • 1 cup arugula
  • ⅛ tsp salt 

Instructions

  1. Preheat broiler. Steam cauliflower according to package directions.
  2. Meanwhile, cook chicken in 2 tsp oil in a large cast iron skillet over medium-high heat 8 to 10 minutes or until done. Remove from skillet.
  3. Melt butter in same skillet over medium heat; add flour and ¼ tsp pepper Cook 2 minutes, stirring constantly.
  4. Gradually stir in milk and broth; cook 6 to 8 minute until bubbly, stirring constantly. Gradually add ½ cup Swiss cheese, stirring until melted.
  5. Stir in cauliflower, chicken, and ham. Top with ¼ cup Swiss cheese and Parmesan. Broil 2 to 5 minutes or until cheese is browned.
  6. Meanwhile, toss together arugula, 1 tsp oil, ¼ tsp pepper, and salt in a bowl. Sprinkle over casserole.
