Sheet Pan Salmon and Vegetables

Ingredients

  • 1 lb small red potatoes, halved
  • 2 Tbsp olive oil, divided
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 6 (6-oz) salmon fillets
  • 1 (12-oz) pkg broccoli florets
  • ⅔ cup mayonnaise
  • 2 Tbsp chopped fresh flat-leaf parsley
  • 1 Tbsp Dijon mustard
  • 1 shallot, minced

Instructions

  1. Preheat oven to 450°F. Toss potatoes with 1 Tbsp oil and ¼ tsp each salt and pepper on a large rimmed baking sheet. Cook 15 minutes.
  2. Meanwhile, sprinkle fish with ¼ tsp each salt and pepper. Add fish and broccoli to baking sheet. Bake 10 minutes or until potatoes are tender and fish flakes with a fork.
  3. Meanwhile, stir together mayonnaise, parsley, mustard, shallot, and ¼ tsp each salt and pepper. Serve with fish and vegetables.
