Sheet Pan Salmon and Vegetables
Ingredients
- 1 lb small red potatoes, halved
- 2 Tbsp olive oil, divided
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 6 (6-oz) salmon fillets
- 1 (12-oz) pkg broccoli florets
- ⅔ cup mayonnaise
- 2 Tbsp chopped fresh flat-leaf parsley
- 1 Tbsp Dijon mustard
- 1 shallot, minced
Instructions
- Preheat oven to 450°F. Toss potatoes with 1 Tbsp oil and ¼ tsp each salt and pepper on a large rimmed baking sheet. Cook 15 minutes.
- Meanwhile, sprinkle fish with ¼ tsp each salt and pepper. Add fish and broccoli to baking sheet. Bake 10 minutes or until potatoes are tender and fish flakes with a fork.
- Meanwhile, stir together mayonnaise, parsley, mustard, shallot, and ¼ tsp each salt and pepper. Serve with fish and vegetables.
