Black Bean and Egg Salad Bowls

Ingredients

  • 6 limes
  • 3 cups chopped tomato
  • 1 cup finely chopped green onions
  • 18 pimiento-stuffed queen olives, chopped
  • 1½ (15-oz) cans no-salt-added black beans, drained and rinsed
  • ¾ tsp salt
  • 3 avocados, chopped
  • 12 cups shredded romaine lettuce
  • 3 hard-cooked eggs, peeled and chopped (see Note)

Instructions

  1. Squeeze juice from limes; divide in half. Combine tomato, onions, olives, beans, the juice of 3 limes and salt in a bowl; gently stir in avocado.
  2. Divide lettuce among 6 bowls; top with avocado mixture, eggs, and juice of 3 limes.

  • 6 (6-inch) corn tortillas

Side Dish Instructions

  1. Wrap tortillas in a damp paper towel. Microwave at HIGH 30 seconds to 1 minute or until warm.
  2. Serve alongside salad.
