Black Bean and Egg Salad Bowls
Warm Corn Tortillas
Ingredients
- 6 limes
- 3 cups chopped tomato
- 1 cup finely chopped green onions
- 18 pimiento-stuffed queen olives, chopped
- 1½ (15-oz) cans no-salt-added black beans, drained and rinsed
- ¾ tsp salt
- 3 avocados, chopped
- 12 cups shredded romaine lettuce
- 3 hard-cooked eggs, peeled and chopped (see Note)
Instructions
- Squeeze juice from limes; divide in half. Combine tomato, onions, olives, beans, the juice of 3 limes and salt in a bowl; gently stir in avocado.
- Divide lettuce among 6 bowls; top with avocado mixture, eggs, and juice of 3 limes.
Side Dish Ingredients
- 6 (6-inch) corn tortillas
Side Dish Instructions
- Wrap tortillas in a damp paper towel. Microwave at HIGH 30 seconds to 1 minute or until warm.
- Serve alongside salad.
