Chicken with Zucchini and Summer Squash
Orzo with SpinachIngredients
- 1 Tbsp butter, divided
- ¾ lb boneless, skinless chicken thighs
- ¼ tsp dried thyme (or use dried rosemary)
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 2 cloves garlic, minced
- Fresh basil leaves
Instructions
- Melt ½ Tbsp butter in a large skillet over medium-high heat. Sprinkle chicken with thyme and ⅛ tsp each salt and pepper. Cook chicken in melted butter 5 to 6 minutes per side or until done.
- Meanwhile, melt ½ Tbsp butter in a large skillet over medium-high heat. Add zucchini, squash, garlic, and ⅛ tsp each salt and pepper. Sauté 8 to 10 minutes or until vegetables are browned and tender. Serve chicken and vegetables over Orzo with Spinach recipe. Garnish with basil.

- ⅔ cup orzo (preferably whole wheat)
- 1 cup baby spinach
- 2 tsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Cook orzo according to package directions.
- Transfer orzo to a bowl; toss with spinach, oil, salt, and pepper.
