Shortcut Sausage Gumbo
Parsley RiceIngredients
- ⅓ cup vegetable oil
- ⅓ cup all-purpose flour
- 1 (13-oz) pkg andouille smoked sausage link, sliced
- 2 green bell peppers, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tsp Cajun seasoning
- 1 (48-oz) carton chicken broth
- 1 (12-oz) pkg frozen cut okra
Instructions
- Cook oil and flour in a Dutch oven over medium heat 10 minutes or until golden, stirring constantly.
- Add sausage, peppers, onion, garlic, and Cajun seasoning.
- Cook 10 minutes, stirring, or until vegetables are tender; add broth and okra.
- Bring to a boil; reduce heat, and simmer 10 minutes or until thickened. Season with salt and pepper to taste, and serve over Parsley Rice recipe.
Side Dish Ingredients
- 2 cups long-grain white rice
- 2 Tbsp butter
- 2 Tbsp dried parsley
Side Dish Instructions
- Cook rice according to package directions. Add butter and parsley; season with salt and pepper to taste.
