Shortcut Sausage Gumbo

Ingredients

  • ⅓ cup vegetable oil
  • ⅓ cup all-purpose flour
  • 1 (13-oz) pkg andouille smoked sausage link, sliced
  • 2 green bell peppers, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 1 (48-oz) carton chicken broth
  • 1 (12-oz) pkg frozen cut okra

Instructions

  1. Cook oil and flour in a Dutch oven over medium heat 10 minutes or until golden, stirring constantly.
  2. Add sausage, peppers, onion, garlic, and Cajun seasoning.
  3. Cook 10 minutes, stirring, or until vegetables are tender; add broth and okra.
  4. Bring to a boil; reduce heat, and simmer 10 minutes or until thickened. Season with salt and pepper to taste, and serve over Parsley Rice recipe.

Side Dish Ingredients

  • 2 cups long-grain white rice
  • 2 Tbsp butter
  • 2 Tbsp dried parsley

Side Dish Instructions

  1. Cook rice according to package directions. Add butter and parsley; season with salt and pepper to taste.
