Sausage Dogs with Grilled Vegetable Relish

Ingredients
- 1 red onion, cut into ½-inch-thick slices
- 2 green bell peppers, quartered
- 2 Tbsp vegetable oil
- 2 (13-oz) pkg smoked sausage links, cut into 6-inch pieces
- 6 hot dog buns, split
- 2 Roma tomatoes, chopped
- ¼ cup Dijon mustard
Instructions
- Preheat grill or grill pan to medium-high heat. Brush both sides of onion and bell peppers with oil.
- Grill sausages, covered, 10 to 12 minutes or until browned. Grill onion and peppers, covered, 3 minutes per side or until tender and browned. Grill buns, cut sides down, 1 to 2 minutes or until toasted.
- Coarsely chop onion and peppers, and place in a bowl. Stir in tomatoes.
- Spread mustard on buns. Top with sausages and vegetable relish.
