Sausage Dogs with Grilled Vegetable Relish

Ingredients

  • 1 red onion, cut into ½-inch-thick slices
  • 2 green bell peppers, quartered
  • 2 Tbsp vegetable oil
  • 2 (13-oz) pkg smoked sausage links, cut into 6-inch pieces
  • 6 hot dog buns, split
  • 2 Roma tomatoes, chopped
  • ¼ cup Dijon mustard

Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush both sides of onion and bell peppers with oil.
  2. Grill sausages, covered, 10 to 12 minutes or until browned. Grill onion and peppers, covered, 3 minutes per side or until tender and browned. Grill buns, cut sides down, 1 to 2 minutes or until toasted.
  3. Coarsely chop onion and peppers, and place in a bowl. Stir in tomatoes.
  4. Spread mustard on buns. Top with sausages and vegetable relish.
