Baked Penne Pasta with Basil Pesto Chicken Sausage

Ingredients

  • 8 oz penne pasta (or use elbow macaroni)
  • 1 Tbsp olive oil
  • 1 (13-oz) basil pesto chicken smoked sausage, sliced
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (24-oz) jar marinara sauce
  • 1 tsp dried basil
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions.
  2. Heat oil in a large nonstick skillet over medium heat. Add sausage to skillet; cook 3 to 5 minutes or until browned.
  3. Add bell peppers; cook 5 minutes longer. Add marinara sauce, basil, and cooked pasta; toss.
  4. Spoon half of mixture into a 2-quart baking dish; sprinkle with 1 cup cheese. Top with remaining sausage mixture and 1 cup cheese.
  5. Bake, uncovered, 25 minutes.
