Baked Greek Chicken

Ingredients

  • 6 bone-in, skin-on chicken breasts
  • 1 tsp dried oregano
  • 2 Tbsp olive oil
  • 1 pint cherry tomatoes
  • 1 cup pitted black olives
  • 1 red onion, cut into wedges
  • 1 lb fingerling potatoes, halved
  • 1 lemon, cut into wedges

Instructions

  1. Preheat oven to 425°F. Season chicken lightly with salt and pepper; sprinkle with oregano.
  2. Cook chicken, skin side down, in hot oil, in batches, 5 minutes per side or until browned.
  3. Place chicken in a lightly greased large roasting pan; surround chicken with tomatoes, olives, onion, potatoes, and lemon wedges. Season lightly with salt and pepper.
  4. Bake 25 minutes or until chicken is done and vegetables are tender.
