Baked Caprese Chicken

Ingredients
- 1½ boneless, skinless chicken breasts
- 1 tsp garlic salt
- 1 tsp pepper
- 3 large Roma tomatoes, sliced
- 1 (1-oz) pkg fresh basil, thinly sliced (or use whole leaves)
- 1 (8-oz) ball fresh mozzarella cheese, thinly sliced (or use block mozzarella)
- 2 Tbsp olive oil
- 3 Tbsp balsamic vinegar
Instructions
- Preheat oven to 350°F. Slightly pound chicken to an even thickness in a zip-top bag using the heel of your hand; cut each piece in half crosswise.
- Place chicken in a greased 13- x 9-inch baking dish; sprinkle with garlic salt and pepper. Top with tomatoes, basil, and mozzarella; drizzle with oil.
- Bake 25 to 30 minutes or until chicken is done; drizzle with vinegar before serving.
