Baked Caprese Chicken

Ingredients

  • 1½ boneless, skinless chicken breasts
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 3 large Roma tomatoes, sliced
  • 1 (1-oz) pkg fresh basil, thinly sliced (or use whole leaves)
  • 1 (8-oz) ball fresh mozzarella cheese, thinly sliced (or use block mozzarella)
  • 2 Tbsp olive oil
  • 3 Tbsp balsamic vinegar

Instructions

  1. Preheat oven to 350°F. Slightly pound chicken to an even thickness in a zip-top bag using the heel of your hand; cut each piece in half crosswise.
  2. Place chicken in a greased 13- x 9-inch baking dish; sprinkle with garlic salt and pepper. Top with tomatoes, basil, and mozzarella; drizzle with oil.
  3. Bake 25 to 30 minutes or until chicken is done; drizzle with vinegar before serving.
