Garlic-Rosemary Roasted Chicken
Ingredients
- 1 (3½- 4-lb) whole chicken
- 1 onion, cut into 1-inch pieces
- 2 Tbsp olive oil
- 6 cloves garlic, minced
- 2 Tbsp fresh rosemary
- 1 tsp kosher salt
- ½ tsp pepper
- ½ cup low-sodium chicken broth
Instructions
- Preheat oven to 350°F. Remove giblets from chicken cavity.
- Place onion in a shallow roasting pan. Truss chicken by tucking wings under and tying legs together with string. Place chicken, breast side up, over onion.
- Combine oil, garlic, and rosemary; rub oil mixture over chicken. Sprinkle with salt and pepper. Add broth to pan.
- Bake 45 minutes. Increase oven temperature to 450°F, and bake 15 minutes or until a meat thermometer inserted in meaty part of leg reads 165°F. Let stand 10 minutes before carving.
