Chicken Nacho Bowls

Ingredients
- 3 cups shredded rotisserie chicken
- 1 (10-oz) can green enchilada sauce
- 1 (15-oz) can pinto beans, drained and rinsed (or use black beans)
- 1 (11-oz) pkg tortilla chips
- 1 (8-oz) pkg shredded colby-Jack cheese
- 1 (8-oz) carton sour cream
- 2 Roma tomatoes, chopped (optional)
Instructions
- Stir together chicken, enchilada sauce, and beans in a microwavable bowl. Microwave 2 to 3 minutes or until thoroughly heated.
- Divide chips among 6 bowls. Top with chicken mixture, cheese, sour cream, and, if desired, tomatoes.

- 3 cups watermelon chunks
- 1 cup blueberries

- Toss together watermelon and berries; chill until ready to serve.
