Strawberry-Pineapple Smoothie
Roasted Coconut Almonds
Ingredients
- 2 cups pineapple chunks
- 1 (16-oz) pkg frozen unsweetened strawberries
- 1 (13.5-oz) can unsweetened coconut milk
- 2 Tbsp raw honey
- 2 Tbsp fresh lime juice
- ¼ cup chia seeds, soaked
Instructions
- Process pineapple, strawberries, coconut milk, honey, and lime juice in a blender, scraping sides as needed. Stir in chia seeds and enough water to reach desired consistency. Pour into glasses.
Side Dish Ingredients
- 1 cup raw almonds
- 2 tsp coconut oil, melted
Side Dish Instructions
- Preheat oven to 350°F; place a rimmed baking sheet in oven while preheating.
- Combine nuts and oil. Carefully spread nuts onto preheated baking sheet.
- Bake 5 minutes; stir. Bake 3 to 5 minutes longer or until golden and fragrant. Season with salt to taste.
