Strawberry-Pineapple Smoothie

Ingredients

  • 2 cups pineapple chunks
  • 1 (16-oz) pkg frozen unsweetened strawberries
  • 1 (13.5-oz) can unsweetened coconut milk
  • 2 Tbsp raw honey
  • 2 Tbsp fresh lime juice
  • ¼ cup chia seeds, soaked

Instructions

  1. Process pineapple, strawberries, coconut milk, honey, and lime juice in a blender, scraping sides as needed. Stir in chia seeds and enough water to reach desired consistency. Pour into glasses.

Side Dish Ingredients

  • 1 cup raw almonds
  • 2 tsp coconut oil, melted

Side Dish Instructions

  1. Preheat oven to 350°F; place a rimmed baking sheet in oven while preheating.
  2. Combine nuts and oil. Carefully spread nuts onto preheated baking sheet.
  3. Bake 5 minutes; stir. Bake 3 to 5 minutes longer or until golden and fragrant. Season with salt to taste.
