Pan-Seared Fish with Lemon-Dill Mayo

Ingredients

  • 3 (6-oz) flounder fillets (or use tilapia)
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp vegetable oil
  • ⅓ cup olive-oil mayonnaise
  • 1½ Tbsp chopped fresh dill
  • 1 Tbsp lemon juice
  • 2 tsp dill pickle relish
  • 1 small clove garlic, minced

Instructions

  1. Sprinkle both sides of fish with salt and pepper. Cook fish in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
  2. Meanwhile, stir together mayonnaise, dill, lemon juice, relish, and garlic. Serve mayonnaise with fish.

  • ¾ lb green beans, trimmed
  • ¼ cup roasted red bell peppers, drained and sliced
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Steam green beans in a steamer basket over boiling water 6 minutes or until tender.
  2. Place green beans and pepper strips in a bowl; toss with oil, salt, and pepper.
