Creamy Shrimp Salad with Feta

Ingredients
- ½ lb peeled and deveined, medium-size raw shrimp
- 2 Tbsp olive oil, divided
- 1 cup grape tomatoes, cut in half
- ½ cup halved pitted kalamata olives
- ½ cup thinly sliced red onion
- ½ cup sour cream
- 1½ Tbsp lemon juice
- 2 tomatoes, sliced and cut in half
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup crumbled feta cheese
Instructions
- Cook shrimp in 1 Tbsp hot oil in a large skillet over medium-high heat 4 minutes or until pink. Toss shrimp with grape tomatoes, olives, and onion in a bowl.
- Whisk together 1 Tbsp oil, sour cream, and lemon juice; stir into shrimp mixture.
- Arrange tomato slices on 3 plates; sprinkle with salt and pepper. Top with shrimp mixture; sprinkle with cheese.
