Creamy Shrimp Salad with Feta

Ingredients

  • ½ lb peeled and deveined, medium-size raw shrimp
  • 2 Tbsp olive oil, divided
  • 1 cup grape tomatoes, cut in half
  • ½ cup halved pitted kalamata olives
  • ½ cup thinly sliced red onion
  • ½ cup sour cream
  • 1½ Tbsp lemon juice
  • 2 tomatoes, sliced and cut in half
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup crumbled feta cheese

Instructions

  1. Cook shrimp in 1 Tbsp hot oil in a large skillet over medium-high heat 4 minutes or until pink. Toss shrimp with grape tomatoes, olives, and onion in a bowl.
  2. Whisk together 1 Tbsp oil, sour cream, and lemon juice; stir into shrimp mixture.
  3. Arrange tomato slices on 3 plates; sprinkle with salt and pepper. Top with shrimp mixture; sprinkle with cheese.
