Pork and Green Bean Stir-Fry
Ingredients
- 1½ lb pork tenderloin, cut into ½-inch pieces
- 2 Tbsp vegetable oil, divided
- 1 (8-oz) pkg French green beans, halved
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 (8-oz) can sliced water chestnuts, drained
- 2 cups low-sodium chicken broth
- ¼ cup soy sauce
- 2 Tbsp cornstarch
- ½ tsp crushed red pepper
Instructions
- Brown pork in 1 Tbsp hot oil in a large skillet over medium-high heat; remove from skillet and set aside.
- Heat 1 Tbsp oil in skillet over medium-high heat; add beans, onion, and bell pepper.
- Cook 6 minutes, stirring constantly; add water chestnuts.
- Whisk together broth, soy sauce, cornstarch, and red pepper.
- Add to skillet along with pork. Bring to a boil, reduce heat, and simmer until sauce is thickened.
