Pork and Green Bean Stir-Fry

Ingredients

  • 1½ lb pork tenderloin, cut into ½-inch pieces
  • 2 Tbsp vegetable oil, divided
  • 1 (8-oz) pkg French green beans, halved
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 (8-oz) can sliced water chestnuts, drained
  • 2 cups low-sodium chicken broth
  • ¼ cup soy sauce
  • 2 Tbsp cornstarch
  • ½ tsp crushed red pepper

Instructions

  1. Brown pork in 1 Tbsp hot oil in a large skillet over medium-high heat; remove from skillet and set aside.
  2. Heat 1 Tbsp oil in skillet over medium-high heat; add beans, onion, and bell pepper.
  3. Cook 6 minutes, stirring constantly; add water chestnuts.
  4. Whisk together broth, soy sauce, cornstarch, and red pepper.
  5. Add to skillet along with pork. Bring to a boil, reduce heat, and simmer until sauce is thickened.
