Creamy Broccoli-Kale Slaw

Ingredients

  • 12 slices center cut bacon
  • 1 lb sliced turkey breast 
  • 1 (2.25-oz) can sliced black olives
  • 6 (0.6-oz) slices Swiss cheese
  • 6 Tbsp Ranch dressing
  • 6 soft taco-size low-carb tortillas (such as Mission) 

Instructions

  1. Cook bacon in a large cast-iron or nonstick skillet until crisp. Drain; crumble bacon.
  2. Divide bacon, turkey, olives, cheese, and dressing among 6 tortillas; roll up.

Side Dish Ingredients

  • 1 (12-oz) pkg broccoli slaw
  • 1 (5-oz) pkg baby kale
  • 1 cup seedless red grapes, halved
  • ⅓ cup olive-oil mayonnaise
  • 1 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Combine slaw, kale, and grapes in a bowl.
  2. Whisk together mayonnaise, honey, vinegar, and salt. Pour over slaw mixture; toss.
