Ingredients

  • 1¼ cups plain yogurt
  • ¾ cup freshly shredded Parmesan cheese
  • ½ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 lb boneless, skinless chicken breasts, cut into strips

Instructions

  1. Preheat oven to 425°F. Combine yogurt, cheese, seasoning, salt, and pepper. Add chicken; toss. Spread chicken in a single layer on a large rimmed baking sheet.
  2. Bake 15 to 20 minutes or until done.

  • 2 (12-oz) pkg broccoli florets
  • 1 cup quartered grape tomatoes
  • 2 Tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (8.8-oz) pouches microwavable brown rice

Side Dish Instructions

  1. Preheat oven to 425°F. Combine broccoli, tomatoes, oil, garlic powder, salt, and pepper on a large rimmed baking sheet; spread in a single layer.
  2. Bake 15 to 20 minutes or until browned and tender.
  3. Meanwhile, cook rice according to package directions. Toss rice with broccoli mixture.
