Parmesan Chicken Strips
Broccoli RiceIngredients
- 1¼ cups plain yogurt
- ¾ cup freshly shredded Parmesan cheese
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
- 2 lb boneless, skinless chicken breasts, cut into strips
Instructions
- Preheat oven to 425°F. Combine yogurt, cheese, seasoning, salt, and pepper. Add chicken; toss. Spread chicken in a single layer on a large rimmed baking sheet.
- Bake 15 to 20 minutes or until done.
Side Dish Ingredients
- 2 (12-oz) pkg broccoli florets
- 1 cup quartered grape tomatoes
- 2 Tbsp olive oil
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 2 (8.8-oz) pouches microwavable brown rice
Side Dish Instructions
- Preheat oven to 425°F. Combine broccoli, tomatoes, oil, garlic powder, salt, and pepper on a large rimmed baking sheet; spread in a single layer.
- Bake 15 to 20 minutes or until browned and tender.
- Meanwhile, cook rice according to package directions. Toss rice with broccoli mixture.
