Rice and Broccoli Salad

Ingredients

  • 1 lb ground beef
  • 1 lb sweet Italian sausage (see Note)
  • 2 green bell peppers, thinly sliced
  • 4 cloves garlic, minced
  • 2 (14.5-oz) cans diced tomatoes
  • 1 (8-oz) can tomato sauce
  • 1 Tbsp Italian seasoning
  • 6 hoagie rolls
  • 1 (8-oz) pkg sliced provolone cheese

Instructions

  1. Cook beef, sausage, bell peppers, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in tomatoes, tomato sauce, and Italian seasoning; bring to a boil, reduce heat, and simmer 15 minutes.
  3. Split hoagie rolls, and layer cheese slices on buns; spoon meat mixture over cheese.

Side Dish Ingredients

  • 1½ cups long-grain white rice
  • 1 lb broccoli, cut into small florets
  • 2 Tbsp finely chopped onion
  • 1 cup shredded Cheddar cheese
  • ½ cup sunflower seeds
  • ½ cup mayonnaise
  • ¼ cup sugar
  • 2 Tbsp vinegar
  • 1 (3-oz) pkg real bacon pieces

Side Dish Instructions

  1. Cook rice according to package directions; season with salt and pepper to taste.
  2. Chop broccoli florets into small pieces.
  3. Combine broccoli, onion, cheese, and sunflower seeds.
  4. Whisk together mayo, sugar, and vinegar; toss with broccoli. Stir in bacon. Chill until ready to serve.
