Mustard Pork Tenderloin

Broccoli-Parmesan Rice and Fruit Salad

Ingredients

  • 2 lb pork tenderloins
  • 2 Tbsp olive oil
  • ¼ cup water
  • ½ cup whole-grain mustard

Instructions

  1. Rub pork with oil; season with salt and pepper.
  2. Cook pork in a large nonstick skillet over medium-high heat 2 minutes per side or until lightly browned.
  3. Place pork and water in a lightly greased 5-to 7-quart slow cooker; brush pork with mustard.
  4. Cover and cook on LOW 6 to 7 hours or until done.
  5. Cut into slices.

Side Dish Ingredients

  • 1½ cups long-grain rice
  • 1 lb broccoli crown, chopped
  • 1 Tbsp butter
  • ½ cup freshly grated Parmesan cheese
  • 1 (2-lb) container deli fruit salad

Side Dish Instructions

  1. Cook rice according to package directions; add chopped broccoli to pan during last 5 minutes of cooking.
  2. Stir in butter, cheese, and salt and pepper to taste.
  3. Serve with fruit.
