Shrimp and Sausage Skillet
Spinach and Fruit Salad
Ingredients
- 2 (8.8-oz) pouches microwavable long-grain rice
- 1 (14-oz) pkg smoked sausage, sliced
- 1 (12-oz) pkg frozen seasoning blend
- 2 Tbsp minced garlic
- 3 Tbsp olive oil
- 1 (12-oz) pkg frozen sliced okra, thawed
- 1 lb peeled and deveined, medium-size raw shrimp
- 1 cup chicken broth
- 2 tsp Creole seasoning
- 3 Roma tomatoes, chopped
Instructions
- Cook rice according to package directions; spread in a thin layer on a baking sheet, and cool .
- Cook sausage, seasoning blend, and garlic in hot oil in a large, deep skillet over medium-high heat until sausage is browned and onion is tender.
- Stir in okra, shrimp, broth, and Creole seasoning. Cook, stirring often, until shrimp turn pink. Stir in rice and tomatoes; cook 2 minutes.
Side Dish Ingredients
- 1 (9-oz) pkg baby spinach
- 1 (15-oz) can mandarin oranges, drained
- 1 Braeburn apple, cored and chopped
- ½ cup balsamic vinaigrette
Side Dish Instructions
- Combine spinach, oranges, and apple in a salad bowl; drizzle with dressing.
