Shrimp and Sausage Skillet

Ingredients

  • 2 (8.8-oz) pouches microwavable long-grain rice
  • 1 (14-oz) pkg smoked sausage, sliced
  • 1 (12-oz) pkg frozen seasoning blend
  • 2 Tbsp minced garlic
  • 3 Tbsp olive oil
  • 1 (12-oz) pkg frozen sliced okra, thawed
  • 1 lb peeled and deveined, medium-size raw shrimp
  • 1 cup chicken broth
  • 2 tsp Creole seasoning
  • 3 Roma tomatoes, chopped

Instructions

  1. Cook rice according to package directions; spread in a thin layer on a baking sheet, and cool .
  2. Cook sausage, seasoning blend, and garlic in hot oil in a large, deep skillet over medium-high heat until sausage is browned and onion is tender.
  3. Stir in okra, shrimp, broth, and Creole seasoning. Cook, stirring often, until shrimp turn pink. Stir in rice and tomatoes; cook 2 minutes.

Side Dish Ingredients

  • 1 (9-oz) pkg baby spinach
  • 1 (15-oz) can mandarin oranges, drained
  • 1 Braeburn apple, cored and chopped
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Combine spinach, oranges, and apple in a salad bowl; drizzle with dressing.
