Cowboy Skillet

Ingredients
- 2 Tbsp butter
- 1 (13-oz) pkg smoked turkey sausage link, cut to ½-inch slices
- ½ onion, chopped
- 2 cups cauliflower crumbles
- 1 cup frozen corn kernels
- 1 red bell pepper, chopped
- 1 (15-oz) can low-sodium black beans, drained and rinsed
- 1 Tbsp olive oil
- 6 large eggs
- ½ cup mild salsa
- ½ cup shredded Mexican blend cheese
- 2 green onions, chopped
Instructions
- Melt butter in a large, deep skillet over medium-high heat. Add sausage and onion; cook 5 minutes or until sausage is browned.
- Add cauliflower, corn, bell pepper, and beans. Cook 5 minutes, stirring occasionally, until cauliflower is tender.
- Meanwhile, heat oil in a large nonstick skillet over medium heat; crack 6 eggs into skillet. Cover and cook 3 minutes minutes or until whites are set and yolks are cooked to desired doneness.
- Serve eggs over sausage mixture with salsa, cheese, and green onions.
