Ingredients

  • 2 Tbsp butter
  • 1 (13-oz) pkg smoked turkey sausage link, cut to ½-inch slices
  • ½ onion, chopped
  • 2 cups cauliflower crumbles
  • 1 cup frozen corn kernels
  • 1 red bell pepper, chopped
  • 1 (15-oz) can low-sodium black beans, drained and rinsed
  • 1 Tbsp olive oil
  • 6 large eggs
  • ½ cup mild salsa
  • ½ cup shredded Mexican blend cheese
  • 2 green onions, chopped

Instructions

  1. Melt butter in a large, deep skillet over medium-high heat. Add sausage and onion; cook 5 minutes or until sausage is browned.
  2. Add cauliflower, corn, bell pepper, and beans. Cook 5 minutes, stirring occasionally, until cauliflower is tender.
  3. Meanwhile, heat oil in a large nonstick skillet over medium heat; crack 6 eggs into skillet. Cover and cook 3 minutes minutes or until whites are set and yolks are cooked to desired doneness.
  4. Serve eggs over sausage mixture with salsa, cheese, and green onions.
