Chicken-and-Spinach Stew

Ingredients

  • 2 large sweet potatoes, peeled and chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • 2 (3-oz) links fully cooked Cajun-style chicken sausage (such as Aidells), cut into ½-inch pieces
  • 2 (14.5-oz) cans fire-roasted diced tomatoes
  • 2 (14.5-oz) cans low-sodium chicken broth
  • 1 (10-oz) pkg baby spinach

Instructions

  1. Place sweet potatoes, onion, and garlic in a 4-to 6-quart slow cooker. Sprinkle chicken with salt.
  2. Place chicken and sausages over vegetables. Add tomatoes and broth.
  3. Cover and cook on LOW 6 hours. Shred chicken with 2 forks; stir in spinach before serving. Season to taste with pepper.
