Shrimp Tacos with Mango-Avocado Salsa

Ingredients

  • 1½ lb peeled and deveined, large raw shrimp
  • ½ tsp garlic powder
  • ½ tsp salt, divided
  • 3 limes, divided
  • 1 mango, peeled and diced
  • 1 avocado, diced
  • 1 small red bell pepper, chopped
  • ½ cup chopped fresh cilantro, divided
  • 12 soft taco-size flour tortillas

Instructions

  1. Sprinkle shrimp with garlic powder and ¼ tsp salt. Cook in a large skillet coated with cooking spray over medium-high heat 3 to 4 minutes or until shrimp turn pink.
  2. Squeeze juice from 2 limes; cut 1 lime into wedges. Combine lime juice, mango, avocado, bell pepper, ⅓ cup cilantro, and ¼ tsp salt in a bowl.
  3. Fill tortillas with shrimp, and top with salsa. Serve with remaining cilantro and lime wedges.
