Shrimp Tacos with Mango-Avocado Salsa
Ingredients
- 1½ lb peeled and deveined, large raw shrimp
- ½ tsp garlic powder
- ½ tsp salt, divided
- 3 limes, divided
- 1 mango, peeled and diced
- 1 avocado, diced
- 1 small red bell pepper, chopped
- ½ cup chopped fresh cilantro, divided
- 12 soft taco-size flour tortillas
Instructions
- Sprinkle shrimp with garlic powder and ¼ tsp salt. Cook in a large skillet coated with cooking spray over medium-high heat 3 to 4 minutes or until shrimp turn pink.
- Squeeze juice from 2 limes; cut 1 lime into wedges. Combine lime juice, mango, avocado, bell pepper, ⅓ cup cilantro, and ¼ tsp salt in a bowl.
- Fill tortillas with shrimp, and top with salsa. Serve with remaining cilantro and lime wedges.
