Skillet Balsamic Chicken
Basil Sweet Potato NoodlesIngredients
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- ½ tsp kosher salt
- ¼ tsp pepper
- 2 Tbsp olive oil
- 1 (8-oz) pkg chopped red onions
- 2 Tbsp minced garlic
- ½ cup balsamic vinegar
- 2 Tbsp honey
- 1½ lb black Mission figs, quartered
- ½ cup crumbled goat cheese
Instructions
- Sprinkle chicken with salt and pepper. Cook in hot oil in a large skillet over medium heat 5 minutes per side or until done; remove from skillet.
- Add onion and garlic to skillet; cook 5 minutes or until onion is tender, scraping skillet to loosen browned bits. Add vinegar and honey; cook 2 to 3 minutes or until reduced by half. Stir in figs. Return chicken to skillet.
- Cook 1 to 2 minutes or until figs are thoroughly heated; sprinkle with cheese.

- 2 Tbsp olive oil
- 2 (10.7-oz) pkg sweet potato noodles (such as Veggie Noodle Co.)
- ½ tsp kosher salt
- ½ tsp pepper
- ¼ cup chopped fresh basil
Side Dish Instructions
- Cook garlic in hot oil in a large skillet over medium-high heat 1 minute or until fragrant; stir in noodles, salt, and pepper.
- Cook 2 to 3 minutes or until tender. Stir in basil.
