Skillet Balsamic Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • 1 (8-oz) pkg chopped red onions
  • 2 Tbsp minced garlic
  • ½ cup balsamic vinegar
  • 2 Tbsp honey
  • 1½ lb black Mission figs, quartered
  • ½ cup crumbled goat cheese

Instructions

  1. Sprinkle chicken with salt and pepper. Cook in hot oil in a large skillet over medium heat 5 minutes per side or until done; remove from skillet.
  2. Add onion and garlic to skillet; cook 5 minutes or until onion is tender, scraping skillet to loosen browned bits. Add vinegar and honey; cook 2 to 3 minutes or until reduced by half. Stir in figs. Return chicken to skillet.
  3. Cook 1 to 2 minutes or until figs are thoroughly heated; sprinkle with cheese.

  • 1½ Tbsp minced garlic
  • 2 Tbsp olive oil
  • 2 (10.7-oz) pkg sweet potato noodles (such as Veggie Noodle Co.)
  • ½ tsp kosher salt
  • ½ tsp pepper
  • ¼ cup chopped fresh basil

Side Dish Instructions

  1. Cook garlic in hot oil in a large skillet over medium-high heat 1 minute or until fragrant; stir in noodles, salt, and pepper.
  2. Cook 2 to 3 minutes or until tender. Stir in basil.
