Romaine and Loaded Potato Salad

Ingredients

  • ½ (32-oz) pkg frozen deli-style potato wedges
  • ½ (12-oz) pkg sliced bacon, chopped
  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 tomato, chopped
  • ½ cucumber, cut into half-moons
  • ½ cup shredded Cheddar cheese
  • 2 green onions, sliced
  • ⅓ cup Ranch dressing

Instructions

  1. Bake potatoes according to package directions.
  2. Meanwhile, cook bacon in a large skillet over medium heat until crisp; drain.
  3. Toss together lettuce, tomatoes, cucumber, cheese, green onions, and desired amount of dressing in a large bowl.
  4. Arrange potatoes on 2 plates; top with salad mix, and sprinkle with bacon.
