Romaine and Loaded Potato Salad

Ingredients
- ½ (32-oz) pkg frozen deli-style potato wedges
- ½ (12-oz) pkg sliced bacon, chopped
- 1 (10-oz) pkg chopped romaine lettuce
- 1 tomato, chopped
- ½ cucumber, cut into half-moons
- ½ cup shredded Cheddar cheese
- 2 green onions, sliced
- ⅓ cup Ranch dressing
Instructions
- Bake potatoes according to package directions.
- Meanwhile, cook bacon in a large skillet over medium heat until crisp; drain.
- Toss together lettuce, tomatoes, cucumber, cheese, green onions, and desired amount of dressing in a large bowl.
- Arrange potatoes on 2 plates; top with salad mix, and sprinkle with bacon.
