Chorizo Egg Casserole

Ingredients

  • ½ lb ground chorizo sausage
  • 8 large eggs
  • ¾ cup heavy cream
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 (4-oz) can chopped green chiles, drained
  • 1 red bell pepper, diced
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F. Cook chorizo in a skillet over medium-high heat 8 minutes or until browned and crumbly; cool.
  2. Grease a shallow 2-quart baking dish with cooking spray. Whisk together eggs, cream, salt, and pepper in a large bowl until blended. Stir in chorizo, chiles, bell pepper, and cheese; pour into baking dish.
  3. Bake 30 to 40 minutes or until puffed and golden. Cool 10 minutes.

  • 1½ pints grape tomatoes, halved
  • 6 Tbsp olive oil vinaigrette
  • 2 Tbsp chopped fresh cilantro
  • ¼ tsp pepper

Side Dish Instructions

  1. Combine all ingredients in a bowl. Chill until ready to serve.
