Blue Cheese-Basil Butter Sirloin

Ingredients

  • 1½ lb top sirloin steak (about 1½ inches thick)
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp butter, softened
  • 1 oz crumbled blue cheese
  • 2 Tbsp chopped fresh basil

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle steak with salt and pepper.
  2. Grill steak, covered, 8 minutes per side or to desired doneness. Cover with foil, and let stand 5 to 10 minutes; cut into 4 serving-size pieces.
  3. Stir together butter, blue cheese, and basil. Dollop steaks with butter mixture before serving.

  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg spinach, stems removed
  • 2 Tbsp balsamic vinegar
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1. Sauté garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute or until fragrant.
  2. Add spinach; cook 3 to 5 minutes or until spinach is wilted. Add vinegar, salt, and pepper. Cook 1 minute or until hot.
