Blue Cheese-Basil Butter Sirloin
Balsamic Wilted Spinach
Ingredients
- 1½ lb top sirloin steak (about 1½ inches thick)
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp butter, softened
- 1 oz crumbled blue cheese
- 2 Tbsp chopped fresh basil
Instructions
- Preheat grill or grill pan to medium-high heat. Sprinkle steak with salt and pepper.
- Grill steak, covered, 8 minutes per side or to desired doneness. Cover with foil, and let stand 5 to 10 minutes; cut into 4 serving-size pieces.
- Stir together butter, blue cheese, and basil. Dollop steaks with butter mixture before serving.

- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1 (10-oz) pkg spinach, stems removed
- 2 Tbsp balsamic vinegar
- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Sauté garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute or until fragrant.
- Add spinach; cook 3 to 5 minutes or until spinach is wilted. Add vinegar, salt, and pepper. Cook 1 minute or until hot.
