Italian Sausage with Peppers

Ingredients

  • 1 (19-oz) pkg Italian sausage links
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • ¼ cup low-sodium chicken broth
  • 3 Roma tomatoes, coarsely chopped
  • ½ tsp fresh lemon juice
  • ¼ tsp kosher salt
  • 2 Tbsp chopped fresh parsley (optional)

Instructions

  1. Cook sausage in a large skillet over medium-high heat 5 minutes or until browned and done. Remove from skillet; slice.
  2. Add oil and butter to hot skillet. Add peppers and onion. Sauté 3 minutes or until just tender. Add broth, tomatoes, lemon juice, and salt. Stir.
  3. Cover and cook 10 minutes. Return sausage to skillet; cook 5 minutes or until thoroughly heated and vegetables are tender.
  4. Serve with a slotted spoon; sprinkle with parsley, if desired.

  • 8 cups torn romaine lettuce
  • ½ cup olive-oil mayonnaise
  • 3 Tbsp heavy cream
  • 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • ½ tsp kosher salt 
  • ¼ tsp pepper

Side Dish Instructions

  1. Place romaine in a large bowl. Stir together mayonnaise, cream, lemon juice, and garlic.
  2. Toss salad with dressing; sprinkle with salt and pepper.
