Italian Sausage with Peppers

Ingredients
- 1 (19-oz) pkg Italian sausage links
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 onion, thinly sliced
- ¼ cup low-sodium chicken broth
- 3 Roma tomatoes, coarsely chopped
- ½ tsp fresh lemon juice
- ¼ tsp kosher salt
- 2 Tbsp chopped fresh parsley (optional)
Instructions
- Cook sausage in a large skillet over medium-high heat 5 minutes or until browned and done. Remove from skillet; slice.
- Add oil and butter to hot skillet. Add peppers and onion. Sauté 3 minutes or until just tender. Add broth, tomatoes, lemon juice, and salt. Stir.
- Cover and cook 10 minutes. Return sausage to skillet; cook 5 minutes or until thoroughly heated and vegetables are tender.
- Serve with a slotted spoon; sprinkle with parsley, if desired.

- 8 cups torn romaine lettuce
- ½ cup olive-oil mayonnaise
- 3 Tbsp heavy cream
- 1 Tbsp lemon juice
- 2 cloves garlic, minced
- ½ tsp kosher salt
- ¼ tsp pepper
Side Dish Instructions
- Place romaine in a large bowl. Stir together mayonnaise, cream, lemon juice, and garlic.
- Toss salad with dressing; sprinkle with salt and pepper.
